Coco Muffins


Ingredients:


All purpose flour
Baking powder
Sugar
Salt
Egg
Shortening
Margarine
Water
Milk
Franklin Baker® Coconut Concentrate
Gem® Medium
Golden Toasted® Coconut Shred

Procedure:

Combine all dry ingredients and shift three times. Set aside. Combine margarine and shortening. Mix for 5 minutes then add egg and mix well. Add milk, Coconut Concentrate and water and mix for 5 minutes. Add dry ingredients and mix for 1 minute. Add Gem Medium. Divide mixture equally into muffin pan lined with paper cups. Sprinkle Toasted Coconut Shred on top. Bake at 350ºF for 20 minutes.
