Island Chicken Sandwich

Ingredients:
Procedure: In a pot, combine chicken, curry, salt, pepper, chicken powder, Coconut Concentrate and water. Replace lid and cook at medium heat until chicken is tender. Remove, cool then flake the chicken. Continue heating the broth until about 4 tablespoons is left. In a bowl, mix in thoroughly the cream cheese and chicken broth. Blend in the flaked chicken, onions, celery, walnut and Gem® Extra Fancy Shred. Toast bread slice and line them with lettuce. Apply the chicken spread evenly. Top with lettuce and toasted bread slices. Serve and refrigerate left over chicken spread.Note: Suggested formulations and process procedures were tested only in the laboratory.
